My favorite pumpkin bread recipe
This post is specifically for my youngest sis, Gabrielle (aka Gabs, Gabaralicious, curly cutie, etc). She's quite the picky eater (sorry Gabs, you know it's true), so I'm surprised she's at all interested in something with pumpkin in the recipe. But whatd'ya know, she loves the stuff and has eaten it for years! :) Give it a whirl sis, I made some for us today. :)
Ingredients (preheat oven to 350˚):
- 2 eggs
- 1 cup sugar
- 1/2 cup cooking oil
- 1 1/2 cups self-rising flour (if you don't have self-rising, just add 2 1/2 tsp baking powder & 3/4 tsp salt to the flour)
- 1 1/2 tsp vanilla
- 1 tsp cinnamon (I usually shake a bit extra in)
- 1 cup pumpkin (I use Libby's canned pumpkin)
- you can throw in 1/4 cup chopped nuts of your choice, but I usually skip 'em
Throw it all together:
- mix eggs, sugar, and oil in one bowl
- in another bowl, mix flour and cinnamon
- alternate adding pumpkin and the sugar/egg/oil mix to the flour (add a bit of pumpkin, then a bit of the egg mix, back and forth til it's all mixed together)
- add vanilla (and nuts if you wish)
- pour into a large greased & floured (or sprayed with Pam) loaf pan
Bake for 45-60 mins, until fork inserted in center comes out clean
Also-it's perfect with a steaming mug of apple cider. :)
